The difference between TAATAS’ Sesame Oil and Gingelly oil
The same parent seed produces TAATAS’ Sesame oil and Gingelly oil. However, the seed processing before oil extraction is the only difference. To clarify, the Sesame oil is yellow in color because the oil is extracted from raw sesame seed (non-roasted). Nevertheless, Gingelly oil is also from raw seed but it uses other processes to make the temperature go a little higher than the first process. This is why it is in amber color.
Furthermore, in the third variation, the TAATAS team roasts the sesame seed and extracts the oil from it. Thus, it becomes a dark brown color. The same seed provides all the three variations. However, the “process” makes these variants.
Moreover, these 3 variants have 3 different uses in the kitchen. Unroasted Sesame oil has a high smoke point, and is used for deep frying, stir frying and food flavoring. Similarly, gingelly oil has a low smoke point, and is used for stir frying to bring out its flavor.
However, TAATAS’ Roasted Sesame oil has a very low smoke point. Thus, it is used raw for flavor enhancing. In addition, it is used even as a dressing oil for salads and dry curries.
